Inside the build

Are you of legal drinking age?

You must be of legal drinking age in your country to enter.

A patient fire, a quiet room.

We founded Ironbark on a single idea: that great spirit cannot be rushed. Every drop begins as local grain, is coaxed through our copper pot stills by hand, and then left alone — in oak, in the dark — for as long as it takes.

Ten years of doing absolutely nothing.

Our warehouse holds four thousand casks, breathing slowly through the seasons. We simply keep the lights low and let time do the work.

From grain to glass, by hand.

Local barley, floor-malted and kilned over a low peat fire.

Come sit by the still.

Tour the warehouse, nose straight from the cask, and taste the range in our tasting room. Guided tours run Thursday to Sunday.
