Inside the build
Six copper handis. One wood-fired bhatti. Biryani cooked the slow way — layered raw, sealed with atta dough, and opened only when the clock says so. This is dum, done properly.
A biryani house that still answers to the clockHANDI began in 1987 as four tables behind a Frazer Town bakery, where Ustad Karim Bhai sealed his first copper pot with a rope of atta dough and told the waiter: "Nobody touches it for ninety minutes."
Six handis. One clock. Nothing opens early.Every handi at HANDI runs a strict 90-minute cycle — sealed, on dum, rested, then carried to the pass and cracked open tableside. This board mirrors the bhatti in real time. Tap a handi to see what's inside.
Ninety minutes, five actsDum pukht — "to breathe and to cook" — is theatre with the lid on. Here is what happens inside the copper while you butter your sheermal.
From the six handis & the coal sigriPick your spice the Frazer Town way — Mild for the little ones, Classic as Karim Bhai intended, Frazer Fire if you have something to prove. Everything below goes to your tray and checks out on WhatsApp.
Smoke, copper & lamplightShot inside the house on a Sunday service — the bhatti at full song, the old hall glowing, the courtyard tables under the rain tree.
